Dre Karine Issa-El-Khoury a complété son doctorat en médecine à l'Université de Montréal et s'est spécialisée en pédiatrie à l'Université Tufts de Boston où elle était déléguée de son programme au sein de l'American Academy of Pediatrics. Elle s'est surspécialisée en allergie et immunologie clinique au Centre universitaire de santé McGill où elle a été résidente en chef et membre du conseil d'administration de l'Association des résidents de McGill. Elle a participé à des conférences nationales et internationales, notamment à l'American College of Allergy Asthma and Immunology et à l'American Association of Immunologists, où elle a présenté ses projets de recherche sur le dysfonctionnement des cordes vocales chez les patients asthmatiques, l'angio-œdème héréditaire, ainsi que l'immunodéficience variable courante. Elle a reçu plusieurs distinctions telles que celles décernées par le CRSNG et l'Université McGill. Elle est certifiée par l'American Board of Pediatrics et par le Collège royal des médecins et chirurgiens du Canada en pédiatrie ainsi qu'en allergie et immunologie clinique. Elle a siégé à plusieurs conseils d'administration dont celui de l'Association des jeunes médecins du Québec. Elle donne régulièrement des cours et des conférences sur les allergies et l'asthme aux étudiants et résidents en médecine ainsi qu'aux médecins praticiens.
Elle a développé la clinique d'allergie et d'immunologie clinique du Centre hospitalier de Verdun affilié à l'Université de Montréal, où elle est chef de département. Le Dr Issa-El-Khoury est membre du Collège des médecins du Québec, du Collège royal des médecins et chirurgiens du Canada, de l'Association des allergologues et immunologistes du Québec, de la Société canadienne d'allergie et d'immunologie clinique du Canada.
